Piña Colada Popsicles

Okay, so I’m not entirely sure why I am apparently obsessed with piña colada flavors lately but apparently I am because this is the second recipe I’ve posted within a week that has that theme. I mean I like the flavors but I don’t want you to think all I do is sit around thinking about piña colada’s all the time because that might seem a bit strange. I will say this though, I do love coconut milk and I strive to use it whenever possible. If you go back and look at my recipes you will find that quite a few contain it. There’s just endless things you can make and I intend on making every single one apparently. I made these popsicles alcohol-free and now I’m not sure why because I could really go for a boozy one. You can definitely add rum if desired, in fact I would encourage it!

Curried Coconut Sweet Potato Soup with Coconut Croutons + {Giveaway winner}

Three ingredients I ALWAYS have in my house are coconut milk, curry spice and some type of broth.  The fourth piece to this puzzle, as I have discovered over the past year, is sweet potatoes.  One of the easiest, quickest things to create with this set of ingredients is a delicious and warming soup.  I had never really been a big soup fan until recently – I used to think it was a big waste of time because it just never really seemed to satisfy me.  This was similar to my dislike for salads (if you have read any of my salad posts you know what I’m talking about).  However, now that I am no longer living the University lifestyle and am making meals for my boyfriend and I all the time, soup has become a staple for us.  This is one that I have made several times and am always extremely happy with.  The coconut croutons are a new addition that makes it even better.

Coconut Rice Noodles with Shrimp and Pineapple

So since I am living in Victoria for school and Andrew is living in Vancouver for school, I make the trek over the ferry almost every weekend so we can spend our weekends together.  (I get Friday’s off so it’s only fair!)  Andrew actually had this recipe picked out and had all the ingredients ready for when I popped over.  What a sweetheart! 🙂  We made this recipe together and it was so lovely!  It reminded me of our past adventures in South East Asia.

Fresh Pineapple Piña Colada

It’s the middle of winter and thanks to globalization, we are still able to get pineapple.  Man how wonderful is that.  I can’t even imagine back in the old days when you had to can all your fruits and vegetables in order to get the proper nutrition year round.  Drinking this Piña Colada totally made me feel like I was in Hawaii, or just on some beach somewhere.
