Okay, so I’m not entirely sure why I am apparently obsessed with piña colada flavors lately but apparently I am because this is the second recipe I’ve posted within a week that has that theme. I mean I like the flavors but I don’t want you to think all I do is sit around thinking about piña colada’s all the time because that might seem a bit strange. I will say this though, I do love coconut milk and I strive to use it whenever possible. If you go back and look at my recipes you will find that quite a few contain it. There’s just endless things you can make and I intend on making every single one apparently. I made these popsicles alcohol-free and now I’m not sure why because I could really go for a boozy one. You can definitely add rum if desired, in fact I would encourage it!
Coconut chips are my latest obsession. If you are a fan of coconut and you haven’t tried these yet, you are in for a tasty surprise. Adam and I are in Portland this weekend and I decided to make some healthy snacks for the road. It’s always tempting when you’re driving a long distance to stop for fast food or gas station snacks. Although it doesn’t always happen, I prefer to be prepared with some healthy snacks so that we can just get to where we’re going and feel good when we get there.
I made three big mistakes when trying to create this “Bunny Bait” as they call it. First of all, I didn’t use nearly enough mini eggs. Let’s be honest you can never have enough mini eggs when a recipe calls for them. Secondly, my bowl was way, way WAY to small to mix this in. This was both frustrating and amusing as I proceeded to spill half of the popcorn all over the floor. Lastly I made far too much for a two person household. Not that it’s not good – in fact I would say it’s too good – but leaving mass amounts of treats like that in the house is dangerous especially as a girl who loves to snack. Good thing my sister is coming this weekend and she is the biggest popcorn fiend around.
I’ve been on a bit of a bad food binge lately. When I say a bit, I mean QUITE a bit. For instance – remember when I made that Skinny Oreo Milkshake last week? Well I ended up pretty much eating the whole box of Oreos in three days, so so much for the “skinny” part of that! That was just the half of it though. I’m not going to go into more nitty gritty details of the past week, but I’m happy to inform you all that I am getting back on track. One thing I’ve noticed since I went a little off-the-track of healthy eating is that my workouts are really wearing me out. Usually I feel great after my workouts and since I always do them on my lunch break it gives me the extra boost of energy to get through the afternoon. For the past week or two though I’ve been wiped when I get back to my desk. I’m hoping that the return to healthy eating will help. Another thing I’ve decided to try which I’ve hoped will help are these Peanut Butter Pretzel Energy Bites. I don’t know why I’ve never thought of this before, but it is such a great idea that I found and modified from Gimme Some Oven.
Are you starting to think I’m a crazy rosemary lady? I realized virtually everything I’ve cooked lately has at least a little bit of rosemary in it. No matter how much I seem to cook with it though I can never seem to use up those little packages before they dry out. I should probably just start growing it shouldn’t I? Anyways, I think that’s enough about my relationship with that delicious herb. If you’re a rosemary fan like me (or cheese or garlic fan) you’re going to love this easy to make popcorn recipe!
I have exciting and somewhat embarrassing news to tell you! We finally bought a microwave. Why is this embarrassing? Well probably because we’ve been living in this apartment for 7 months, having to heat up food in our oven. One of the main purposes of buying a microwave was to make (easy) popcorn. I’m currently on a no-chip year meaning I’ve banned myself from eating any type of potato chip for a year. What’s the next best thing? Popcorn of course! Popcorn is actually kind of a healthy snack until you add bacon, maple syrup and butter to it but I like to dress it up with fun flavours. This one is a new one for me and I’m not going to lie, I may have eaten the whole bowl as my dinner last night but that’s besides the point. This would also be a great snack for Superbowl Sunday.
