I’ve had a couple people request that I do more crock pot recipes. Let’s face it, who doesn’t like crock pot recipes. They are quick and easy and you can just throw everything in a pot and go out for the day and come home to an amazing smelling kitchen and a ready-to-eat meal! It’s almost like having a personal chef, you just have to tell it what to cook and give it the ingredients!  I love using my crock pot as much as I possibly can so that I don’t have to spend a ton of time in the kitchen.

Jamaican Jerk Salmon Bowl

Today, I was feeling super tropical.  It could be due to the fact that it’s suuuuper warm in Vancouver, or due to the fact that some days I just crave tropical food!  Take these Black Bean and Mango Tacos for example.  I was definitely in a tropical foodie mood when I whipped that one up!  I love the crazy flavours found in Jamaican Jerk Chicken, but sadly I didn’t have any chicken in my fridge/freezer.  So instead, I used salmon!!(Is salmon considered meat?) Sound like a winning combination?  It totally was!

Ginger Beef Kabobs with Grilled Vegetables

The best part about summer evenings is totally BBQing!!  Thankfully, our apartment in Vancouver has quite a decent sized balcony which is perfect for BBQing dinners!  We have BBQed Mediterranean Turkey Sliders a while back, and look forward to doing more grilling as the summer progresses!  We don’t have the most amazing barbeque, but hey it works!  And man were these Ginger Beef Kabobs ever delicious!  I like my beef slightly more on the medium-rare side, and these were cooked perfectly!

Pork Chops with Golden Apple Sauce

As I have said before I am not really a big meat eater. On the whole, I make mostly vegetarian meals for myself but if someone else is cooking then I am happy to eat most kinds of meat. I have to admit, Adam is actually responsible for this recipe (well actually Rachael Ray is but he recreated it). Looking through the pictures has me convinced that I should really let him do more of the cooking around here. He’s going to love hearing that I’m sure.

Slow Cooker Pork Carnitas with Pico de Gallo

There is this little Mexican taco place right next to my apartment that is SOOO good.  If you ever go to Vancouver, you must check out La Taqueria!  Considering I could probably go there every night and not get tired of the deliciousness, I decided I must begin making them myself so I don’t break the bank.  I’m actually not one to eat out because I love experimenting in the kitchen, but this taco place is just so good!  So, this is my version of pork Carnitas.  And what better way to make pork than in the crock pot!  These tacos are super easy to make, which makes them even more enjoyable to eat!

Mediterranean Turkey Sliders

There is nothing quite like the taste of home made burgers.  They are truly phenomenal!  I mean how many restaurants do you go to where you can choose what you put INSIDE the patty?  Not many at all!  The possibilities for flavour are endless, and as I’ve found, the more stuff you put in your patties, the better they taste!  Once you’ve made a few burgers you really don’t need a recipe and can almost envision what exactly the burger will taste like before you cook it up and eat it!

Italian Wedding Soup

Every time someone in my family gets a cold, my mom makes them the most amazing chicken soup from scratch. There is nothing more soothing than freshly made chicken stock. It is probably the easiest thing to make too! All you do is stick all your chicken bones and skin and all the nasty innards and stick them in a pot of water with a bunch of vegetables and let it sit for a few hours over some heat. You can make so many soups with this chicken stock it’s fantastic.

Mouthwatering Meatballs in Homemade Marinara

I went to visit the Victoria Public Market the other day with my mom.  We stopped by this little restaurant called Roast for lunch.  I had a kale salad, and my mom had the most amazing meatballs we have ever tried.  When we got home all we wanted to do was eat more meatballs!!!  My mom was able to replicate these meatballs perfectly.  They are the most melt in your mouth meatballs EVER!  Roast makes all their food fresh in front of your eyes and uses high quality meats.  There is nothing processed about it! I definitely recommend trying it out if you are in the area.

Almond Rosemary Crusted Chicken

I am a pretty big chicken fan, in fact it is one of the only meats I eat on a regular basis.  Let’s be honest though, boneless skinless chicken breast can get really boring after a while.  This is one of my big struggles with chicken, is how to make it taste delicious and not dry out.  Adam has instilled in me a phobia of undercooked chicken.  Of course I always had some concerns about undercooking it, but this guy makes me see pink chicken when there is no pink to be found.  Since dry chicken is one of my biggest pet peeves, this has made it even more difficult for me to cook the stuff.  However, I managed to NOT dry out my chicken this time, and with this delicious crust I was very very happy with the outcome.

Maple Orange Pork Tenderloin

Today is Bell Let’s talk day! For those of you who don’t know what that is, Bell will donate 5¢ more to mental health initiatives for every: Text message sent, Mobile and long distance call made, Tweet using #BellLetsTalk, Facebook share of our Bell Let’s Talk image.  I think this is such a great initiative, especially as we learn more and more about mental illness. I have quite a few close friends who have had constant battles with depression and anxiety, and am proud to say that many of them have gone to seek help! So do what you can to talk to your peers about mental illness and ensure they feel comfortable seeking help or talking about their feelings! Speaking of feelings – I feel very strongly about this delicious pork tenderloin recipe I am about to share with you! 😉
