Watermelon Mint and Feta Skewers

Watermelon screams summer to me.  Although watermelon is mostly water (hence the name), it is extremely refreshing and perfect on a hot day!  I must admit I have been in a bit of a rut in terms of thinking up things that are super easy to make in a pinch if you have unexpected guests.  Luckily, one of my friends suggested this salad that she loves that only contains watermelon, mint and feta!  After scouring pinterest for a few minutes, I found photos for a great easy and delicious appy.

Zucchini Balsamic Quinoa Salad

In the summer, I love zucchini.  In fact, I actually like zucchini all year round!  However, summertime is when zucchini is in season on the west coast.  I like my zucchini in all forms as well.. Grilled on the BBQ, cooked in muffins/loaf, it’s all good!!  I especially love at the end of summer when the zucchinis in my parents garden are ready for picking.  There is nothing quite like eating something you have grown in your own garden – I find it extremely rewarding!

Sautéed Shrimp with Arugula and Tomatoes

Why wouldn’t the shrimp share his secret recipe?  Because he was a little shellfish!!  Luckily, I am not shellfish, and would be happy to share this recipe with you!  Shrimp is a summer time must-have.  To me, it screams summer BBQ, picnic, or just hot weather in general! I really feel sorry for all you seafood haters, because you are seriously missing out!! 😉 There is nothing that pairs better with shrimp than garlic…  Although I think garlic just goes well with seafood in general!  The only problem with these little guys is that that are quite expensive, making them a special treat.

Curried Quinoa and Asparagus Salad

Ok so you already know about the health benefits of quinoa, and asparagus, and probably chick peas, and obviously an apple a day keeps the doctor away. Ya Ya Candice we know already!! Well this salad really has it all then!!! If you are looking for a fabulous meatless Monday meal then here it is! This salad is packed with protein, vitamins and everything good for you! Just looking at the salad makes my mouth water. Then again I’m a sucker for anything with quinoa… and asparagus for that matter 🙂

Meatless Monday: Recipe Roundup

So for those of you who don’t know, I had my wisdom teeth removed last Friday. Which means I’ve been eating a whole lot of mushy food for the past few days. I’m talkin’ mashed potato, mashed banana, mushy chicken noodle soup, jello, ice cream etc. So needless to say I really haven’t made anything exciting. Apart from being in a bit of mild pain, I have had no appetite for mushy things, and instead spend my time daydreaming about all the crunchy food I could be eating!! First, I want to eat a salad!!! I miss crunching down on delicious kale, and other crisp veggies. Because I am unable to decide on just one delicious morceau of food, I give you a whole recipe roundup of vegetarian delights to celebrate Meatless Monday!!

Kale Beet and Feta Salad

Kale – what a pretentious vegetable, am I right? I mean who does it think it is, insisting on being massaged before tasting even somewhat good. I’ve been late to jump on the kale bandwagon. In fact I wouldn’t even say I have jumped on or ever will for that matter. However, sometimes when you have a period of unhealthy eating, you’re in the grocery store and that mean green kale is staring you straight in the face telling you it’s one of the healthiest things you could get there and you have no other choice. So I gave it a try in this salad. Was it delicious? Yes, but I’ll give the beets and feta the credit for that one.

Spring Tabbouleh

So I am back in Victoria and getting my wisdom teeth out tomorrow.  Hurray… Yup, starting tomorrow I will be on a strictly liquid diet!  I will not be enjoying any of this spring tabbouleh I just made, instead I will be stuck eating broths, ice cream and jello… Maybe a few mashed potatoes in there as well.   How many of you have had your wisdom teeth out?  Did it hurt!? Please say no 😉

The one thing I miss about living in an apartment that faces north is that I do not get any sun on my balcony.  Not only do I not have a garden, but it makes it slightly difficult to grow any sort of plant on my deck.  Sure I have a few herbs, but they don’t thrive nearly as well as if they had a bit of sun!

Avocado, Mango and Coconut Salad

Another Meatless Monday recipe for all those who go vegetarian one day a week or everyday! This recipe is actually vegan and oh so delicious. I always have this thought in my mind that one day I’ll go completely vegan and be able to do it properly. I do believe that if you are able to achieve the balance of a proper vegan diet that it can be the healthiest diet there is. I wouldn’t have a problem giving up meat, but it would be really hard for this cheese lover to live without dairy products. It’s also not the cheapest and at this point I just don’t think it’s feasible for me. However, I think I can do it one day a week so I’m moving towards a vegan Meatless Monday now instead of just vegetarian. This Avocado, Mango and Coconut salad is one of my favorite newest creations!

Frisée and Grapefruit Salad

When we were travelling in the States Adam picked up a Creole style cooking magazine.  He and I LOVE Creole food but I don’t know the first thing about making it.  Look forward to some of that coming hopefully really soon if it works out for me! One recipe in this magazine that kind of threw me for a loop was this frisée and grapefruit salad.  I mean is that the first thing that comes to mind when you think of cajun cuisine?  Certainly isn’t for me, but it looked so fresh and summery that I couldn’t resist trying it out.  Now this isn’t really my type of salad in that I usually like something heartier. However, as a side dish it is light and refreshing and a great way to add some wonderful, fresh flavours to your meal.

Brussels, Bacon and Apple Salad

With all of the Brussels Sprouts recipes I’ve been sharing lately you’re probably starting to think they are the only thing I am capable of cooking with. The truth is that I actually have been on a bit of a craze in the past few months and I’m perfectly okay with that. I just hope you’re not all getting sick of seeing these leafy green veggies on my posts. This salad in particular is rather similar to the previous Brussels Sprouts salad I posted. The striking difference in this one is that it contains bacon, which in it’s very essence makes it more superior. Brussels Sprouts and bacon are a match made in heaven and if you haven’t given it a try yet, you need to give yourself this experience. These two were meant to be together forever and ever.
