Watermelon Mint and Feta Skewers

Watermelon screams summer to me.  Although watermelon is mostly water (hence the name), it is extremely refreshing and perfect on a hot day!  I must admit I have been in a bit of a rut in terms of thinking up things that are super easy to make in a pinch if you have unexpected guests.  Luckily, one of my friends suggested this salad that she loves that only contains watermelon, mint and feta!  After scouring pinterest for a few minutes, I found photos for a great easy and delicious appy.

Quinoa Chickpea Paprika Salad

I am going to Culinaire Victoria tonight with my mom!! I am so excited to try a bunch of food that I likely have not had before and check out the local restaurants around town!  My mom bought me tickets for Christmas and ever since then I have been dying to see what it is all about.  I will be sure to arrive hungry so that I can try as much food as possible!  Hopefully they have some healthy options like this quinoa chickpea and paprika salad I made!

Do any of you have a herb garden?  While I am here in Victoria, I have full access to my parent’s herb garden.  What a treat!!!  I do have a small herb garden on my deck in Vancouver, but it is nothing like the one I have here in Victoria.  Our parsley plant is in full bloom (full leaf?) at the moment which inspired me to make something delicious!  I love making up salads at the beginning of the week, or during the week so that I can quickly throw them in a container and pack them for my lunch.

Mediterranean Quinoa Salad

About five years ago I went to a cooking demonstration at one of the local grocery chains in my hometown, Victoria BC, by a Vancouver chef named Anthony Sedlak.  Anthony was the host of Food Network Canada’s “The Main” and a charming, passionate chef.  Tragically, he passed away in July 2012.  One of the things he made for us that day was a Mediterranean couscous salad that has become a staple in my family and is probably the one recipe I have made the most times in my life. As a former anti-salad girl, I can honestly say this recipe changed the way I look at what I once thought was a boring side dish.  I have modified it many times over and here is my current favorite variation!
